Heston's Cheese Sauce

I made cauliflower cheese with a cheese sauce recipe I got from the channel 4 series "How to Cook like Heston"  (minus the truffle oil and other extravagances!)
It went fairly well but was richer than I had expected - perhaps next time I will make less sauce.

    theres a link to the recipe if you click "how to cook like heston" but i missed out a few ingredients.
    For mine I reduced half a can of cider (didnt want to open a bottle of wine) and then added chicken stock and then just coated some grated cheese in flour and added that until it melted.
